About Fat Back: Old World artisanship blended with New World flavors. All Fat Back Meats are made by hand, in small batches to ensure the highest quality. Our salami, aka Fatties, are slowly dried and aged in a controlled environment for a minimum of six weeks. The slow aging process develops flavors and textures that excite the taste buds. Fat Back also makes several flavors of bourbon barrel smoked bacon, fresh sausages, bacon chutney, and more.
